VIDEO RECIPE - Jamaican Ginger Cake

This week's recipe is the perfect partner for a brew!! Gotta love a brew and a bit of cake :) >> JAMAICAN GINGER CAKE <<

Ingredients:

1 large ripe banana 2 tbsps honey (or sweetener of your choice) 2 tbsps molasses (available in health stores) 25g organic butter, melted pinch of allspice pinch of ground cloves ¼ tsp ground nutmeg 2 tbsps ground ginger 2 tsps ground cinnamon 1 tsp vanilla extract (optional) 3 medium sized eggs pinch of salt pinch of bicarbonate of soda 100g ground almonds 100g gluten free plain flour 25g ground flaxseed 20g fresh peeled ginger, finely grated or chopped

Makes 11 slices

Per slice: 177 calories 9g fat 19g carbs 5g protein

Preheat oven to 170°C / 350°F.

In a large bowl, mash the banana thoroughly.

Add the honey, molasses, melted butter, spices, vanilla extract, eggs, salt and bicarbonate of soda.

Mix until well combined.

Add the ground almonds, flour, flaxseed and fresh ginger and mix well.

Line the base of a loaf tin with baking paper and pour the mixture into the tin.

Bake for 45 minutes to 1 hour. A skewer inserted into the centre will come out dry when cooked.

Remove from the oven, allow to cool a little then remove from tin.

Store in an airtight container and refrigerate for up to a week or slice and freeze.
