Something for a sweet tooth this week - Yummers! >> CRUNCHY REFRIGERATOR BARS <<

Ingredients: 80g coconut oil (or use 40g plus 40g creamed coconut) 30g honey (or sweetener of your choice) 30g pumpkin seeds 50g fresh coconut, grated (or use desiccated) 120g oats (use gluten free if preferred) 30g chopped nuts 30g dark chocolate chips 30g nut butter 10g dark chocolate, melted Makes 12 186 calories 11g carbs 14g fat 4g protein Line a tray with baking paper. Place the coconut oil, creamed coconut and honey in a saucepan and melt gently over a medium heat, stirring. Put all of the other ingredients into a bowl except for the chocolate chips. Stir well until thoroughly combined. Stir in the chocolate chips. Pour the mixture onto the lined tray and shape into a rectangle. Cover with a sheet of baking paper and press gently to help bind the ingredients. Refrigerate for one hour or more and then cut into 12 slices. Spread a thin layer of nut butter onto each slice and drizzle on some melted chocolate. Refrigerate until chocolate has set. Store in an airtight container and refrigerate for up to 3 days. Enjoy!
