VIDEO RECIPE - Winter Spice Granola
This week's recipe is perfect for winter mornings to add a little spice too your breakfast.

Ingredients:
2 vanilla pods, scraped 200g porridge oats (use gluten free if preferred) 100g buckwheat 50g shredded coconut 3 tbsps chia or pumpkin seeds (or both) 20g organic cocoa powder pinch of sea salt 2-3 tsps ground cinnamon 1/2 tsp ground nutmeg pinch ground cloves (optional) 3 tbsps organic coconut oil, melted drizzle of honey or sweetener of your choice (optional)
Serves 8
Per serving:

Preheat oven to 150°C / 300°F.
Carefully slice open the vanilla pods length ways and scrape out the center.
Place the scrapings into a large bowl. Add remaining ingredients and stir well.
Line 2-3 baking trays with foil. Spread the mixture evenly onto the trays.
Bake for 20 minutes. Give the mixture a stir, then cook for another 20-25 minutes, until crispy. Allow to cool thoroughly.
Store in an airtight container for up to 3 weeks.
Serving suggestion:
Enjoy with yogurt and fresh or freeze dried fruit (found in the baking section of supermarkets or health stores).
