VIDEO RECIPE - Quinoa Breakfast Bars

>> QUINOA BREAKFAST BARS <<

Ingredients:

2 apples, peeled and grated 2 small carrots, grated 250g cooked quinoa 40g desiccated coconut 30g ground golden linseeds (flaxseed) 50g sunflower and pumpkin seeds (pre-soaked in cold water overnight) 40g raisins 2 tbsps honey (or use sweetener of your choice) 2 tsps vanilla extract 50g coconut oil, melted pinch of sea salt pinch of bicarbonate of soda 1 tbsp ground cinnamon 1 egg white

(makes 12 bars)

Per bar:

162 calories 10g fat 15g carbs 3g protein

Method:

Preheat oven to 170°C / 350°F. Line an oven tray with baking paper. Mix all ingredients in a large bowl until thoroughly combined. It the mixture is a bit dry, add a splash of cold water to help the mixture bind. Transfer mixture to the baking tray and even out the top and sides with a spatula. Bake for 30 minutes. Allow to cool on the tray then cut into 12 slices. Store in an airtight container and refrigerate for up to 3 days.
